Soft Pumpkin Cookies

  • 1 cup pumpkin
  • 2 cup flour
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp milk
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1 cup mini chocolate chips
  • pinch of salt


  1. Preheat oven to 350º
  2. Combine oil, pumpkin, sugar, egg, vanilla and milk in mixing bowl
  3. In a separate bowl, combine baking soda, cinnamon, baking powder, salt and flour
  4. Slowly add flour mixture into pumpkin until all is incorporated

  7. Use a spoon to place about a tablespoon of dough onto an ungreased cookie sheet
