Fresh Fruit and Ricotta Toast

This time of the year is always so busy. Especially with the holidays around the corner. So this recipe is exactly what we all need. Simplicity! It’s easy, delicious and creative. It will make breakfast fun whether it’s a grab-and-go option, or made as a brunch dish. I never have been a big fig fan, but after I made this toast I’m ready to explore new recipes with the fruit. Plus, ricotta makes everything taste better!

  • fresh pears
  • 1 cup part-skim ricotta
  • fresh black figs
  • loaf of whole wheat or multi-grain bread, toasted
  • 1/2 cup walnut pieces
  • honey


  1. Toast bread until crisp and darker brown.
  2. Spread an even amount of ricotta on all pieces. Set half aside.IMG_6415 2
  3. Top the first group of slices with pear slices and walnuts.IMG_6448
  4. Drizzle honey across the top.
  5. Top the second group of ricotta-covered slices with sliced figs.
