Light and Easy Lettuce Wraps

May is always a busy month. But the good news is, the weather is starting to warm up, and summer is just around the corner! When life gets hectic, simple recipes are great. Especially simple recipes that are delicious. These lettuce wraps are great when you’re in a pinch and make about 12 servings. If you keep the filling and lettuce separate, the leftovers also work well for lunch the next day! Perfect for the entire family as a starter, or double the recipe to serve as the entree.

IMG_5486Ingredients (12 servings):


  • 16 oz ground turkey
  • 6.5 oz organic lightly browned tofu, diced
  • 8 oz sliced water chestnuts, chopped into slices
  • 1/4 cup shredded carrots, plus more for garnish
  • 4 green onions, sliced
  • 1 head of butter lettuce
  • 1 tbsp sesame seed oil
  • 2 tbsp low sodium soy sauce
  • 1 tsp ground ginger
  • 1 tsp white pepper
  • 2 tsp garlic powder
  • fresh ground black pepper
  • 1/2 chili paste (optional)


  1. Add sesame seed oil to a medium sized sauce pan
  2. Brown turkey in pan and remove from heat and drain
  3. Return pan to heat and add carrots, onions and water chestnuts
  4. Saute for two minutes then add tofu, soy sauce, garlic powder, ginger and peppers
  5. Saute additional 3-4 minutes
  6. Rinse lettuce and pat dry with paper towel. Remove leaves
  7. Fill with turkey mixture and serve with additional soy sauce
