Healthy Coconut Shrimp with Mango Salsa

Mango and coconut combine for a great tropical flavor combination. The unsweetened coconut and coconut oil used in this healthy coconut shrimp pair with fresh mango salsa so well. This dish is easy to make and so quick! It’s a great healthy alternative to a notoriously sugary dinner. Enjoy this delicious coconut shrimp with amino salsa today!

Ingredients:

  • 1 ripe medium mango
  • 1/4 cup finely chopped red onion
  • 1-2 tbsp minced fresh jalapeño, seeds removed
  • 1 tbsp freshly squeezed lime juice

Shrimp

  • 2 lbs large raw, peeled shrimp
  • 1 cup shredded, unsweetened coconut
  • 2 large eggs
  • 1/2 cup flour
  • 1/2 cup coconut oil

Directions:

  1. Remove skin from mango and chop into small pieces
  2. Combine with onion, jalapeño and lime juice IMG_4204
  3. Refrigerate or set aside
  4. Heat coconut oil in medium saucepan
  5. Cover shrimp in flour
  6. Dip shrimp in lightly beaten eggs
  7. Dredge in coconut, covering completelyIMG_4209
  8. Place battered shrimp in heated oil
  9. Cook on one side until golden brown, then flip and repeat IMG_4217
  10. Remove shrimp from coconut oil and let cool on paper towel
  11. Serve with mango salsa
