BBQ Chicken Corn Dog Bites

IMG_3347If you’re looking for a unique recipe that’ll be an instant favorite at any dinner or party, this is the perfect recipe. These are BBQ chicken corndog bites. All of your favorite things combined into one! They’re bite sized and take a lot of self control in order to not eat the entire basket! You’ve don’t have to be a cooking master to make these either, just get some BBQ sauce, chicken, and corn meal and you’ve got yourself a delicious starter! Ingredients:IMG_3323

  • 1/2 cup of flour
  • 2 tsp baking powder
  • 1 egg
  • 1 tbsp honey
  • 1/2 cup finely ground cornmeal
  • 1/2 cup milk
  • 2 cups diced cooked chicken
  • 1/2 cup BBQ sauce (plus additional for dipping)
  • vegetable oil for frying

Directions:

  1. Chop up chicken breast and stir with barbecue sauce
  2. Place chicken in mini muffin sprayed with non-stick cooking spray

  3. Press tablespoon full of chicken mixture into pan and freeze for four hours

  4. Combine flour, baking powder, cornmeal
  5. In a separate bowl mix together egg, milk, and honey then combine with dry ingredients
  6. Heat vegetable oil in a pan over medium heat
  7. Remove chicken from freezer and dip into batter
  8. Place battered chicken into hot oil and remove when golden brown IMG_3343
  9. Place golden corn dogs on paper towel to dry and serve immediately with sauce
