Banana Walnut Breakfast Cookies


IMG_3186Breakfast is my favorite meal of the day. Unfortunately, I rarely have time to sit down and enjoy a relaxing meal in my kitchen. Most breakfasts are on the go! For those days when you can’t afford to take a break for a morning meal, these breakfast cookies are the perfect grab and go option! Bake them the night before and you can have breakfast for the entire week prepared. They are fairly healthy and have a great flavor that will make your hectic mornings a little more enjoyable! Just save them in the refrigerator, pop them in the toaster, and go tackle your day.

Ingredients: IMG_3153

  • 2 cups whole wheat flour
  • 1 1/2 cups old fashioned oats
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3 ripe bananas, mashed
  • 1/2 cup coconut oil
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup chopped walnuts or pecans


  1. Preheat oven to 350º
  2. Combine flour, oats, baking soda, and cinnamon in a medium bowl
  3. Mash bananas in a separate bowl and mix in oil, brown sugar, and egg
  4. Slowly add in flour mixture to bananas until thoroughly mixed
  5. Chop walnuts into small pieces and fold in to dough
  6. Spread dough in a flat circle on a greased cookie sheet or parchment paper (cookies will not expand much at all)IMG_3160
  7. Cook for 18 minutes or until cookies are golden brown and crispy



You can store them in the refrigerator or the freezer to keep them fresh!
