Baked Shrimp Scampi

This warm dish is perfect to serve a few guests on a chilly night. The shrimp are coated in a delicious layer of egg, butter, and garlic, and then the entire dish is placed in the oven so that everything is baked evenly and to perfection. It’s also perfect for entertaining since it can be made a couple hours ahead and kept refrigerated until ready to bake.The longest part of making baked shrimp scampi is cleaning the shrimp and letting them defrost, but the recipe overall is very quick and simple. The lemons give off a tart juice that pairs well with the shrimp. This dish can either work as an appetizer for a small party or a dinner. It’s deceptively rich and filling!

Ingredients (Serves 6):

  • 2 lbs large raw shrimp
  • 3 T olive oil
  • 2 T dry white wine
  • 1 stick butter, softened
  • 4 cloves of garlic, minced
  • 3 T dried shallots
  • 3 T fresh parsley, minced
  • 1/2 t red pepper flakes
  • 1 t grated lemon zest
  • 2 T lemon juice
  • 1 large egg yolk
  • 2/3 C Panko
  • Salt & pepper
  • Sliced lemons for garnish

  1. Preheat oven to 450 degrees.
  2. Clean and butterfly shrimp, leaving the tails on.
  3. Mix olive oil, wine and salt & pepper in a large bowl.
  4. Add shrimp and set aside.
  5. Mix remaining ingredients (except lemon garnish) until well combined.
  6. Arrange shrimp, cut side down and single layer in a baking dish.img_1882
  7. Evenly top shrimp with pieces of the butter mixture. Place lemon garnish on top.
  8. Bake for 15 minutes.
  9. Finish under a broiler for 1 minute and serve.
