Fried Egg & Quinoa Breakfast Bowl

This is one of the tastiest, healthiest, and most protein packed ways to start your day! Frying an egg is one of my favorite styles to prepare eggs in. I love the cooked white and the warm yolk. Placing a fried egg on top of mushrooms, spinach, and quinoa makes for a filling and delicious breakfast that will hold you over until your lunch break (whenever that may be). It’s very simple and quick to make for those mornings when you’re rushing to get out the door, but it has more of a gourmet feel. Best of both worlds!

Ingredients:

  • 1 cup quinoa, cooked
  • 1 cup spinach
  • 1/2 cup mushrooms
  • 2 tsp garlic powder
  • 1 egg
  • salt and pepper to taste
  • olive oil

Directions:

  • Pour quinoa into boiling water and cook until water is mostly absorbed. Let quinoa sit for 5 minutes longer until water is gone and quinoa is light and fluffy
  • In a median pan, cook spinach and mushrooms until soft and tender
  • Add garlic powder and pepper for flavor
  • Add spinach and mushrooms to quinoa and let sit in covered pot
  • Fry the egg in the olive oil (I prefer to do sunny side up, less messy!)
  • Plate the quinoa and veggie mixture, and slide the fried egg on top
  • Sprinkle salt and pepper for more flavor on top
