Matcha Ice Cream Cake

Green tea has a mild yet sweet tasting flavor that works wonderfully for a light dessert. Not to mention, matcha powder (which is the highest quality powdered green tea), has numerous health benefits. Some of these benefits include a high number of antioxidants, an immune system boost, and an increase in energy level. I love drinking a cup of green tea before going to bed or waking up , so what better way to end the night than with a matcha dessert. This ice cream pie is cool and refreshing, and offers many health benefits in a low fat and low calorie dessert. It’s great for entertaining, and stores in the freezer very well! Plus, the crust is one of the best crusts I’ve ever eaten.

Ingredients:

Crust:

  • 2 1/4 cup almonds
  • 3/4 cup coconut oil
  • 2 tablespoons honey

Filling:

  • 3 cans coconut milk, full fat
  • 1/3 cup raw honey
  • 2 tsp vanilla extract
  • 1 tablespoon matcha powder (start with one tablespoon and increased if desired)

Crust Directions:

  1. Place almonds, coconut oil and honey in a food processor and blend until ground fairly well
  2. Spread mixture in the bottom of a springform pan and freeze for thirty minutes

Ice Cream Directions:

  1. Pour chilled coconut milk, vanilla, and honey into ice cream maker
  2. Spoon the matcha in slowly, tasting after each addition until the cake is the desired flavor
  3. Let the ice cream maker run for 30 minutes
  4. Spread the ice cream over the crust and then freeze until it reaches ice cream consistency

5. Drizzle raspberry sauce over the top to balance out the flavors

Serve straight out of the freezer with fresh raspberries for a delicious dessert!
