Grilled Summer Veggies

Veggies are the perfect side for almost any meal. This side dish is simple, nutritious, and gives the vegetables a wonderful grilled taste. I personally love the sweet potatoes and asparagus, but you can do any mix of veggies for a dinner party or just dinner with with family. Just throw them on the grill and complete any dinner or meal!

Ingredients:

  • assorted veggies
  • 1/3 cup balsamic vinegar
  • 1/3 cup reduced sodium soy sauce
  • 1/4 cup chopped fresh ginger
  • 1/4 cup chopped garlic
  • 1 tbsp olive oil IMG_0830

Directions:

  1. Rinse and slice veggies into large chunks(if using sweet potato precook in the microwave two minutes before slicing)
  2. Mix together all ingredients for the marinade
  3. Pour marinade over vegetablesIMG_0831
  4. Place them on the barbecue, close lid
  5. Continue brushing veggies with marinade as they cook

  1. Grill until lightly browned (about 5-7) minutes
  2. Arrange on a platter and serve while warm
