Homemade Mini Corn Dogs

Corn dogs are on my top ten list of guilty pleasures. There’s something about the sweet cornmeal batter that just makes it so irresistible! Well, if you’re like me, instead of getting a giant greasy corn dog at a state fair or ball game, try these homemade mini corn dogs. They work perfectly as a starter for a party and are pretty light (plus mini means a little less guilt, right?). I used turkey dogs to try to make them healthier than traditional franks. Either way, this recipe is a go to. Make it this summer for a fun snack or meal.

Ingredients:

  • 1 egg
  • 1/2 cup flour
  • 1/2 cup cornmeal (finely ground)
  • 1/2 cup milk (I used 2%)
  • 1 package turkey dogs
  • 1 tablespoon honey
  • 2 teaspoons baking powder

Directions:

  1. Combine dry ingredients then add milk and egg until mixture is smooth
  2. Cut turkey dogs in half and press skewers about 3/4 of the way in
  3. Heat oil on the stove over medium (test heat by dropping in bits of batter)
  4. Dip the turkey dog in the batter until it is coated evenly and immediately place in hot oil
  5. Remove when corn dog turns golden brown and place on paper towel to dry
  6. Serve immediately (they will be hot!) with ketchup and mustard
