Fruit Hand Pie

Pie is one of my favorite desserts. They’re fun to make, delicious, and so easy. Especially in the summer when there are plenty of fresh fruits available, making a berry pie becomes the perfect summertime activity. With fresh fruit and only a little bit of honey, this dessert doesn’t dip too low on the unhealthy scare. So pick up some fresh fruit and try these berry pies today!

Pie Crust:

  • 1 1/2 cups all purpose flour
  • 1 teaspoon sugar
  • 4 tbsp cold, unsalted butter
  • 2 tbsp cold vegetable shortening
  • 1/4 cup ice water

 Filling:

  • 1/2 cup honey
  • peaches, blueberries, strawberries blackberries

Directions:

  1. Mix together flour, sugar, butter, and vegetable shortening
  2. Add cold water until dough is workable (soft but holds together well)
  3. Refrigerate one hour
  4. Meanwhile heat the fruit with sugar and cornstarch until juicy and aromatic
  5. Remove dough from refrigerator and roll into circle
  6. Fill center of dough with scoop of fruit mixture
  7. Fold sides of crust over until the fruit is covered
  8. Bake at 375º for 20 minutes, remove and sprinkle the crust with water and sugar
  9. Bake for 20 more minutes at the same temperature or until pie is golden brown
