Mini Red Velvet Fro-Yo Sandwiches

Wow, is the Fourth of July already here? This year has been flying by. One part of the Fourth of July that I love is seeing all of the cute red, white, and blue recipes. Since its a notoriously hot holiday, I think that the perfect Fourth of July dessert has to be ice cream sandwiches. So I decided to put a little Fourth of July twist on this classic dessert. With my homemade red velvet cookie/cake recipe and homemade frozen yogurt, I created a healthier and patriotic version of a classic dessert dish. I used my cookie press for this recipe to give the red velvet cookies a star shape, but you could also just make circle sandwiches if you don’t have the press! You also can replace the natural sweetener and whole wheat flour with sugar and regular flour if you don’t have the ingredients, it just changes the sugar and calorie count (but it’s a holiday so those don’t count,right?). The cookies are light and fluffy and they pair perfectly with the creamy vanilla frozen yogurt. Bring on the fireworks, we’ve got dessert to last all night.

 

Homemade Red Velvet Cookie Mix

Ingredients:

  • 1 1/2 cup flour (substitute whole wheat or coconut flour if desired)
  • 1/4 cup raw coco powder
  • 3/4 cup sugar ( you can also use a natural sweetener, I prefer liquid stevia)
  • 2 eggs
  • 3 tbsp coconut oil (or butter)
  • 1/3 cup applesauce
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp red food dye (healthier alternatives include beet powder and natural food colors)
  • 1/4 tsp salt

Directions:

  • Preheat the oven to 375º
  • Whisk together flour, coco powder, baking soda, and salt
  • In a mixer combine sweetener (or sugar), eggs, coconut oil, applesauce, vanilla, and food dye, liquid stevia
  • Slowly mix dry ingredients into wet until smooth and no lumps appear (if mixture is too runny add more flour until you can handle like cookie dough)
  • Roll dough into sections that can be placed into the cookie press. Place the dough that isn’t being used in the refrigerator.
  • Press stars onto lights greased cookie sheet about an 1 1/2 inches apart (will slightly expand)
  • Cook 8-10 minutes, remove and let cool

Homemade Vanilla Frozen Yogurt

Ingredients:

  • 2 cup plain yogurt (non fat or full fat)
  • 2 tsp vanilla extract
  • 2/3 cup agave nectar or sugar if you want a sweeter taste

Directions:

  • Pour yogurt, vanilla, and agave into ice cream maker
  • Let churn 30 minutes
  • Remove from ice cream maker and let freeze for 2 hours

Ice Cream Sandwich Directions:

  • Take a small scoop of vanilla fro-yo and place between two star cookies
  • Roll the sides in red, white, and blue sprinkles
  • Serve immediately or place in freezer for the party!
