Summer Pool Party Snacks

If you’re like me, than summers are all about the outdoors. If I’m not in the kitchen creating a new recipe, I’m most likely laying by the beach or pool tanning. After going for a swim, hunger always seems to strike. If you have a group you’re spending the warm, summer days with, then these snacks are a great way to keep everyone full and happy. Plus, they’re made with healthy ingredients so you can keep on looking sexy in that bikini. There isn’t anything much better than laying poolside snacking on taco cups, pepper poppers, peach iced tea or fruit salsa. I hope you enjoy them as much as I do!


Taco Cups




  • 1 package wonton wrappers
  • 1 lb ground turkey
  • 1 cup salsa
  • 1 cup Mexican blend cheese


  1. Brown turkey meat over medium heat until cooked (season to taste, I prefer onion and red pepper flakes)
  2. Line cupcake tin with two wonton wrappers that are diagonal
  3. Fill the cups with meat and top with salsa and cheese
  4. Bake at 375º for 10-15 minutes


Pepper Poppers



  • 1 Bag mini sweet peppers (can use jalapeños if you prefer the taste)
  • 1 ear of corn
  • 1 can black beans
  • 3 tbsp lite sour cream
  • 5 ounces Mexican blend cheese
  • 1 cup bread crumbs


  1. Halve mini peppers and remove any seeds
  2. Mix together corn, sour cream, corn and cheese
  3. Stuff half of pepper with corn mixture
  4. Sprinkle bread crumbs and cheese across top
  5. Bake at 350º for 25 minutes


Fruit Salsa



  • 3 whole what tortillas
  • 2 tablespoons coconut oil melted
  • cinnamon to tast
  • 2 granny smith apples
  • 6 strawberries
  • 1 package raspberries
  • 2 tbsp fruit spread (no extra sugar added


  1. Preheat oven to 350º
  2. Slather coconut oil and cinnamon both sides of wheat tortilla, slice into eighths
  3. Bake for 8-10 minutes (until nice and crispy)
  4. Slice all fruit into diced pieces and combine with fruit spread until mixed evenly
  5. Chill spread and serve with baked tortilla chips


Peach Iced TeaIMG_0169


  • 7 cups water
  • 2 white tea bags
  • 2 whole peaches
  • agave nectar to sweetness preference


  1. Place two tea bags in warm water and let steep 30 minutes
  2. Heat sliced peach with agave over medium heat until soft
  3. Pour peach mixture into tea
  4. Let steep for two hours
  5. Serve with ice
